Description

A simple and flavorful chicken soup, perfect for chilly days and comfort food cravings.


Ingredients

Scale
  • 2 cups chicken, shredded
  • 1 cup ditalini pasta
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 4 cups chicken broth
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add onions, carrots, celery, and garlic, sautéing until softened.
  2. Pour in the chicken broth and bring to a boil.
  3. Add the shredded chicken and ditalini pasta, cooking until the pasta is al dente.
  4. Season with salt and pepper.
  5. Serve hot, garnished with fresh parsley.

Notes

Store leftover soup in an airtight container in the fridge for 3-4 days, or freeze for longer storage. Add more vegetables for a heartier soup.
