- 1 pound ground beef
- 1 onion, chopped
- 3 cups potatoes, diced
- 4 cups beef broth
- 1 cup milk
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large pot, heat olive oil over medium heat and cook the ground beef and onion until the meat is browned.
- Add the diced potatoes and beef broth to the pot and bring to a boil.
- Reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
- Stir in the milk and cheddar cheese until melted and smooth.
- Season with salt and pepper to taste. Serve hot.
Notes
This soup can be made ahead of time and reheats well. Add extra cheese on top when serving for more flavor.
