- 1/2 cup butter (softened)
- 1/3 cup brown sugar
- 1/4 cup granulated sugar
- 1 tbsp vanilla extract
- 1 egg (at room temperature)
- 1 & 1/4 cup old-fashioned whole rolled oats
- 1 cup all-purpose flour
- 1/8 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup milk chocolate chips
Instructions
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- In a mixing bowl, cream the softened butter, brown sugar, and granulated sugar together until well combined and fluffy.
- Add the egg and vanilla extract, then mix on medium speed for about 3 minutes until the mixture is light and airy.
- Carefully mix in the all-purpose flour, oats, cinnamon, baking soda, and salt. Scrape the sides of the bowl to ensure everything is evenly incorporated.
- Gently fold in the milk chocolate chips.
- Using a large cookie scoop, portion out 8 evenly sized mounds of dough onto the prepared baking sheet. Lightly press down each mound to about 1 inch in thickness.
- Bake in the preheated oven for 11-12 minutes, keeping an eye on them to avoid overbaking.
- Allow the cookies to cool on the baking sheet for 20 minutes before transferring them to a wire cooling rack to cool completely.
Notes
Store cookies in an airtight container. They can last about a week at room temperature or up to three months in the freezer.
