Description

A comforting, creamy soup made with hearty potatoes and flavorful ground beef, perfect for busy days.


Ingredients

  • 4 cups diced potatoes
  • 1 pound ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Optional: shredded cheese and green onions for topping

Instructions

  1. In a skillet, brown the ground beef with chopped onion and garlic until cooked through. Drain excess fat.
  2. Transfer the beef mixture to the crockpot.
  3. Add diced potatoes, beef broth, salt, pepper, thyme, and paprika to the crockpot.
  4. Stir to combine.
  5. Cook on low for 360-480 minutes or high for 180-240 minutes until the potatoes are tender.
  6. Stir in the heavy cream before serving.
  7. Top with shredded cheese and green onions if desired.

Notes

Store leftovers in an airtight container for 3-4 days in the refrigerator, or freeze for up to three months. Remember to leave out any toppings before freezing.
