- 4 cups diced potatoes
- 1 pound ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Optional: shredded cheese and green onions for topping
Instructions
- In a skillet, brown the ground beef with chopped onion and garlic until cooked through. Drain excess fat.
- Transfer the beef mixture to the crockpot.
- Add diced potatoes, beef broth, salt, pepper, thyme, and paprika to the crockpot.
- Stir to combine.
- Cook on low for 360-480 minutes or high for 180-240 minutes until the potatoes are tender.
- Stir in the heavy cream before serving.
- Top with shredded cheese and green onions if desired.
Notes
Store leftovers in an airtight container for 3-4 days in the refrigerator, or freeze for up to three months. Remember to leave out any toppings before freezing.
