- 4 cans Black-Eyed Peas
- 2 (12 oz) packets Frozen Chopped Collard Greens
- 14 oz Smoked Sausage
- 4 cups Chicken or Vegetable Broth
- 1 tsp Salt
- 1 tsp Garlic Powder
- 1 tsp Pepper
- 1 tsp Onion Powder
- 1/2 tsp Paprika
Instructions
- Chop the smoked sausage into bite-sized pieces.
- In a large Crockpot, add the chopped sausage along with the Black-Eyed Peas, frozen collard greens, broth, and all spices (salt, garlic powder, pepper, onion powder, and paprika).
- Stir to ensure everything is well mixed.
- Cook on high for 5-6 hours.
- Once cooking is complete, give the dish a gentle stir. If a thinner consistency is preferred, add one cup of water at a time until the desired texture is reached.
- Serve warm and enjoy your delicious meal!
Notes
Pair with cornbread, a fresh green salad, or coleslaw. Add hot sauce or fresh herbs for extra flavor. Leftovers can be stored in the fridge for up to four days or frozen for up to three months.
