Description

These crispy patties are made from nutrient-rich sweet potatoes and red lentils, served with a refreshing avocado cilantro sauce.


Ingredients

Scale
  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup red lentils, rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Oil for frying
  • 1 ripe avocado
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Additional salt to taste

Instructions

  1. Boil the sweet potatoes for about 15 minutes or until they’re tender, then drain and mash until smooth.
  2. In a separate pot, cook the red lentils in boiling water until softened, around 15 minutes, then drain.
  3. In a large bowl, combine the mashed sweet potatoes, cooked lentils, breadcrumbs, chopped onion, minced garlic, cumin, paprika, salt, and pepper. Mix thoroughly.
  4. Form the mixture into 8-10 patties based on your preferred size.
  5. Heat oil in a skillet over medium heat and carefully add the patties, cooking for 4-5 minutes on each side until golden brown and crispy.
  6. For the avocado sauce, blend the avocado, cilantro, lime juice, and a pinch of salt until smooth.
  7. Serve the patties warm, drizzled with the avocado cilantro sauce.

Notes

Drain lentils and sweet potatoes well to prevent sogginess. Customize with extra veggies or spices as desired.
