Ingredients
Scale
- 2 medium sweet potatoes, peeled and cubed
- 1 cup red lentils, rinsed
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Oil for frying
- 1 ripe avocado
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Additional salt to taste
Instructions
- Boil the sweet potatoes for about 15 minutes or until they’re tender, then drain and mash until smooth.
- In a separate pot, cook the red lentils in boiling water until softened, around 15 minutes, then drain.
- In a large bowl, combine the mashed sweet potatoes, cooked lentils, breadcrumbs, chopped onion, minced garlic, cumin, paprika, salt, and pepper. Mix thoroughly.
- Form the mixture into 8-10 patties based on your preferred size.
- Heat oil in a skillet over medium heat and carefully add the patties, cooking for 4-5 minutes on each side until golden brown and crispy.
- For the avocado sauce, blend the avocado, cilantro, lime juice, and a pinch of salt until smooth.
- Serve the patties warm, drizzled with the avocado cilantro sauce.
Notes
Drain lentils and sweet potatoes well to prevent sogginess. Customize with extra veggies or spices as desired.
