  • For the Chicken:
    • 5 chicken cutlets
    • Sea salt and ground black pepper, to taste
    • Oil (for frying)
    • ⅓ cup all-purpose flour
    • ½ tsp salt
    • ¾ tsp smoked paprika
    • 2 eggs
    • ¼ tsp salt
    • ¾ cup panko crumbs
    • ¼ cup breadcrumbs
    • 1 tsp dried parsley
    • ½ tsp ground black pepper
    • ½ tsp sea salt
    • ½ tsp dried oregano
    • 1 tsp garlic powder
    • ¼ cup Parmesan cheese (freshly grated)
  • For Assembly:
    • 2 romaine hearts (chopped)
    • 12 French baguettes
    • Extra Parmesan cheese (freshly grated)

Instructions

  1. Make the Caesar Dressing: In a bowl, mix all dressing ingredients until smooth and creamy. Set aside about 4-5 tablespoons for the salad mixture.
  2. Prepare the Chicken: Place chicken cutlets on a cutting board and, if necessary, pound them to an even thickness. Season with sea salt and black pepper.
  3. Set Up Your Breading Station: Prepare three shallow plates: First: Mix flour, salt, and smoked paprika. Second: Whisk the eggs with salt until well combined. Third: Combine panko, breadcrumbs, dried parsley, black pepper, salt, oregano, garlic powder, and Parmesan.
  4. Fry the Chicken: Heat oil in a frying pan over medium heat. Dredge each cutlet in flour, dip in egg, then coat in breadcrumbs. Fry until golden and crispy, about 4-5 minutes each side. Drain on a wire rack.
  5. Assemble Your Sandwiches: Slice the baguettes, spread the reserved Caesar dressing, layer in the crispy chicken, add the romaine salad, and finish with more Parmesan. Serve immediately with your choice of fries or salad.
