Description

A comforting and creamy penne pasta dish loaded with shredded rotisserie chicken and tender broccoli, ready in under 30 minutes.


Ingredients

  • 1 lb penne pasta
  • 1 whole rotisserie chicken (34 lbs, shredded, about 4 cups meat)
  • 4 cups broccoli florets (fresh or frozen)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced fine)
  • 1 medium yellow onion (diced small)
  • 2 tbsp butter
  • 1 cup heavy cream
  • 1/2 cup low-sodium chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup whole milk mozzarella cheese (shredded)
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the penne according to the package instructions until al dente, adding the broccoli florets during the last 3 minutes of cooking.
  2. Reserve 1 cup of the starchy pasta water before draining the pasta and broccoli together. Set aside.
  3. In a large skillet, heat olive oil and butter over medium-low heat. Add diced onion and cook for 4–5 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  4. Pour in heavy cream and chicken broth, bringing to a gentle simmer for 2–3 minutes.
  5. Remove from heat and whisk in Parmesan and mozzarella until smooth. Season with Italian seasoning, garlic powder, salt, black pepper, and red pepper flakes if desired.
  6. Add the drained penne and broccoli to the sauce, tossing gently to coat. Fold in shredded rotisserie chicken until warmed.
  7. Gradually stir in reserved pasta water until desired creamy consistency is achieved.

Notes

For a different flavor, consider adding sun-dried tomatoes or swapping the cheese. This dish can be frozen for up to 2 months and reheated.
