Description

A rich and creamy gnocchi dish with wilted spinach and tangy feta, perfect for busy weeknights.


Ingredients

  • 1 package of gnocchi
  • 2 cups fresh spinach
  • 200g feta cheese, crumbled
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Cook the gnocchi according to the package instructions until they float to the top. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Toss in the fresh spinach and cook until wilted.
  5. Pour in the heavy cream and allow it to come to a simmer.
  6. Stir in the crumbled feta cheese, mixing until melted and combined.
  7. Gently fold the cooked gnocchi into the skillet, stirring to coat them in the creamy sauce.
  8. Season with salt and pepper to taste.
  9. Serve hot, optionally garnished with grated Parmesan cheese.

Notes

For a lighter option, consider using half-and-half instead of heavy cream. Fresh spinach can be replaced with kale.
