- 1 package of gnocchi
- 2 cups fresh spinach
- 200g feta cheese, crumbled
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Cook the gnocchi according to the package instructions until they float to the top. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté until fragrant, about 1 minute.
- Toss in the fresh spinach and cook until wilted.
- Pour in the heavy cream and allow it to come to a simmer.
- Stir in the crumbled feta cheese, mixing until melted and combined.
- Gently fold the cooked gnocchi into the skillet, stirring to coat them in the creamy sauce.
- Season with salt and pepper to taste.
- Serve hot, optionally garnished with grated Parmesan cheese.
Notes
For a lighter option, consider using half-and-half instead of heavy cream. Fresh spinach can be replaced with kale.
