Ingredients

  • 2 cups cooked chicken (fresh, leftover, or rotisserie)
  • 1 cup cheddar cheese, shredded
  • 8 oz cream cheese
  • 4 cups chicken broth
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Tortilla chips for serving
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, sauté the diced onion and minced garlic over medium heat until they become translucent.
  2. Pour in the chicken broth, diced tomatoes, black beans, corn, and the cooked chicken. Season with chili powder, cumin, salt, and pepper. Bring everything to a gentle boil.
  3. Once boiling, reduce the heat and add the cream cheese, stirring until it’s completely melted and blended into the broth.
  4. Finally, mix in the shredded cheddar cheese, continuing to stir until it’s melted and the soup is creamy.
  5. Serve hot, topping each bowl with crunchy tortilla chips and a sprinkle of fresh cilantro.
