Description

A delightful twist on traditional pizza featuring a fluffy flatbread base made primarily from cottage cheese, perfect for busy weeknights or casual gatherings.


Ingredients

  • 1 cup cottage cheese
  • 1 egg
  • 1/2 cup almond flour
  • 1/2 tsp baking powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 cup shredded mozzarella cheese
  • Toppings of choice (pepperoni, vegetables, etc.)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the cottage cheese, egg, almond flour, baking powder, garlic powder, and salt. Stir until you achieve a smooth consistency.
  3. On a parchment-lined baking sheet, spread the mixture to form your pizza crust.
  4. Bake the crust in the preheated oven for about 15-20 minutes until it turns golden and is set.
  5. Once baked, take it out and layer on your favorite toppings along with shredded mozzarella cheese.
  6. Pop it back in the oven for an additional 10-12 minutes or until the cheese is molten and bubbly.
  7. When done, slice it up and serve warm.

Notes

For healthier options, substitute almond flour with oat flour or use low-fat cottage cheese. Store leftovers in an airtight container in the refrigerator for up to 3 days.
