- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 large egg
- 1⅛ cups granulated sugar
- ½ cup vegetable or canola oil
- 2 tablespoons buttermilk or regular milk
- ½ teaspoon vanilla extract
- 3 ripe bananas, mashed very well
- ½ cup chopped walnuts (optional)
Instructions
- Preheat your oven to 325 degrees Fahrenheit.
- In a small bowl, combine the flour, baking soda, and salt. Set it aside for later.
- In a larger bowl, mix the egg, sugar, and oil until smooth.
- Slowly add the dry ingredient mixture to the wet one, stirring until just combined. The batter will be thick at this stage.
- Stir in the buttermilk, vanilla extract, and mashed bananas until thoroughly incorporated.
- If you’re using walnuts, fold them into the mixture.
- Pour the batter into a greased loaf pan.
- Bake for 50 to 75 minutes, or until a toothpick inserted in the center comes out clean.
Notes
For a nut-free version, skip the walnuts or substitute with chocolate chips. Store in an airtight container at room temperature for 3-5 days.
