Description

A cozy and comforting soup that combines potstickers, coconut milk, and fresh herbs, perfect for chilly nights.


Ingredients

  • 12 pieces Potstickers (homemade or frozen)
  • 4 cups Chicken or Vegetable Broth
  • 1 tablespoon Fresh Ginger (minced)
  • 3 cloves Garlic (minced)
  • 1 can Coconut Milk
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Fresh Lime Juice
  • 1/4 cup Cilantro (chopped)
  • 1/4 cup Green Onions (sliced)

Instructions

  1. In a large pot, heat a little oil over medium heat. Add the minced garlic and ginger, and sauté for about 2 minutes until fragrant.
  2. Pour in the chicken or vegetable broth, then add the coconut milk and soy sauce. Stir until well combined.
  3. Bring the mixture to a gentle simmer.
  4. Add the potstickers to the pot and allow them to cook in the broth for about 5-7 minutes, or until heated through.
  5. Finally, stir in the fresh lime juice, cilantro, and green onions just before serving for a burst of flavor.

Notes

Store leftovers in an airtight container for up to three days. For freezing, leave out the potstickers before storing.
