Description

A comforting Thai-inspired soup with potstickers in a rich coconut broth, perfect for cozy nights.


Ingredients

  • 12 pieces Potstickers (homemade or frozen)
  • 4 cups Chicken or Vegetable Broth
  • 1 tablespoon Fresh Ginger (minced)
  • 3 cloves Garlic (minced)
  • 1 can Coconut Milk
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Fresh Lime Juice
  • 1/4 cup Cilantro (chopped)
  • 1/4 cup Green Onions (sliced)

Instructions

  1. In a large pot, heat up a splash of oil over medium heat. Add minced ginger and garlic, sautéing until fragrant for about a minute.
  2. Pour in the chicken or vegetable broth, followed by the coconut milk. Stir to combine.
  3. Bring the mixture to a gentle boil, then reduce the heat to a simmer.
  4. Add the potstickers to the pot, cooking for about 4-5 minutes if using frozen or until they float.
  5. Stir in soy sauce and fresh lime juice, bringing depth to the flavor.
  6. Finally, serve hot, garnished with chopped cilantro and sliced green onions.

Notes
