Description

Delightful Coffee Cake Muffins with a crumbly streusel topping, perfect for breakfast or a snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup whole milk
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 cup all-purpose flour (for streusel)
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter, cold and cut into small pieces
  • 1 teaspoon ground cinnamon (for streusel)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Line a muffin tin with paper liners or lightly grease it.
  3. In a large bowl, combine the flour, sugar, baking powder, salt, and cinnamon.
  4. In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract.
  5. Pour the wet mixture into the dry ingredients and mix gently until just combined.
  6. In a small bowl, mix the flour, brown sugar, and cinnamon for the streusel. Add cold butter and mix until crumbly.
  7. Spoon muffin batter into cupcake liners, filling about 2/3 full.
  8. Sprinkle streusel topping over the muffin batter.
  9. Bake for 18-22 minutes, checking for doneness with a toothpick.
  10. Let cool for 5 minutes before transferring to a wire rack.

Notes

Serve warm with butter or cream cheese. Add fruits or nuts for variations.
