- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup whole milk
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1/2 cup all-purpose flour (for streusel)
- 1/2 cup brown sugar, packed
- 1/4 cup unsalted butter, cold and cut into small pieces
- 1 teaspoon ground cinnamon (for streusel)
Instructions
- Preheat the oven to 375°F (190°C).
- Line a muffin tin with paper liners or lightly grease it.
- In a large bowl, combine the flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract.
- Pour the wet mixture into the dry ingredients and mix gently until just combined.
- In a small bowl, mix the flour, brown sugar, and cinnamon for the streusel. Add cold butter and mix until crumbly.
- Spoon muffin batter into cupcake liners, filling about 2/3 full.
- Sprinkle streusel topping over the muffin batter.
- Bake for 18-22 minutes, checking for doneness with a toothpick.
- Let cool for 5 minutes before transferring to a wire rack.
Notes
Serve warm with butter or cream cheese. Add fruits or nuts for variations.
