- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- Fresh basil leaves, for garnish
- Olive oil, for frying
Instructions
- Preheat your oven to 400°F (200°C).
- Season both chicken breasts with salt and pepper on all sides.
- Dredge each breast in flour, shaking off excess.
- Dip into the beaten eggs, then press into the breadcrumb and Parmesan mixture to coat evenly.
- Heat a thin layer of olive oil in a large skillet over medium heat.
- Fry the chicken until golden, about 4–5 minutes per side.
- Transfer the breasts to a baking dish, spoon marinara over each, and sprinkle with shredded mozzarella.
- Bake for 20 minutes until cheese is melted, bubbly, and edges are lightly browned.
- Garnish with fresh basil leaves and serve hot.
Notes
For a gluten-free version, use gluten-free breadcrumbs and flour. You can also store leftovers in an airtight container in the fridge for up to 3-4 days.
