Description

Chewy cookies that bring the comforting flavor of traditional cinnamon rolls into bite-sized treats, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • For the filling: ½ cup brown sugar, packed
  • 2 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.
  3. In another bowl, cream the softened butter with granulated and brown sugars until fluffy and light.
  4. Beat in the egg and vanilla extract until smooth and fully incorporated.
  5. Gradually mix the dry ingredients into the wet mixture until just combined. Be careful not to over-mix!
  6. For the filling, in a small bowl, combine the brown sugar and cinnamon.
  7. Spread half of the dough onto a piece of parchment paper, sprinkle with the filling, and roll it up tightly.
  8. Slice the rolled dough into rounds and place them on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes, or until the cookies are golden brown.

Notes

For a dairy-free version, substitute the butter with a plant-based option. Can also use whole wheat flour for a nuttier flavor.
