- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 1 large egg
- 2 tsp vanilla extract
- For the filling: ½ cup brown sugar, packed
- 2 tsp ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.
- In another bowl, cream the softened butter with granulated and brown sugars until fluffy and light.
- Beat in the egg and vanilla extract until smooth and fully incorporated.
- Gradually mix the dry ingredients into the wet mixture until just combined. Be careful not to over-mix!
- For the filling, in a small bowl, combine the brown sugar and cinnamon.
- Spread half of the dough onto a piece of parchment paper, sprinkle with the filling, and roll it up tightly.
- Slice the rolled dough into rounds and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until the cookies are golden brown.
Notes
For a dairy-free version, substitute the butter with a plant-based option. Can also use whole wheat flour for a nuttier flavor.
