Description

Delightful cookies combining the flavors of traditional cinnamon rolls with the convenience of a cookie.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • ½ cup brown sugar, packed (for the filling)
  • 2 tsp ground cinnamon (for the filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, salt, and cinnamon.
  3. In another bowl, cream the softened butter with granulated and brown sugars until fluffy.
  4. Beat in the egg and vanilla extract until the mixture is smooth.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Prepare the filling by combining brown sugar and cinnamon in a small bowl.
  7. Spread half of the dough on parchment paper, sprinkle with filling, and roll it up tightly.
  8. Slice the rolled dough into rounds and place them on a baking sheet lined with more parchment paper.
  9. Bake for 10-12 minutes or until golden brown.

Notes

Serve warm with cream cheese icing, or enjoy with a scoop of vanilla ice cream.
