Description

A warm, sweet bread combining a soft focaccia texture with delightful flavors of cinnamon and brown sugar, perfect for breakfast, snacks, or dessert.


Ingredients

  • 2 cups warm water (heated to about 110℉)
  • 2 tsp active dry yeast
  • 1 tsp white granulated sugar
  • 4 cups bread flour (spooned and leveled)
  • 1 1/2 tsp salt
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter (melted)
  • 6 tbsp brown butter
  • 1/3 cup light brown sugar
  • 2 tsp cinnamon
  • 1 cup powdered sugar (sifted)
  • 1 tsp vanilla extract
  • 2 1/2 tbsp milk (adjust for desired consistency)

Instructions

  1. In a small bowl, combine warm water and sugar. Sprinkle the yeast on top and let it sit for 10-15 minutes until it becomes foamy.
  2. In a large bowl, whisk the flour and salt together. Pour in the activated yeast mixture and olive oil. Stir until the dough forms a sticky ball. Lightly rub the surface with olive oil.
  3. Cover the bowl with a damp tea towel or plastic wrap. Place it in the refrigerator for at least 12 hours.
  4. Grease a 9×13-inch baking pan and line it with parchment paper. Pour 2 tablespoons of melted butter into the center of the pan. Gently deflate the dough and place it into the buttered pan, cover, and let it rise for 1 1/2 to 2 hours in a warm spot.
  5. In a small saucepan, melt 1/2 cup butter over medium heat until it has a nutty aroma and turns golden-amber. Remove it from heat and let cool for 10 minutes.
  6. Add brown sugar and cinnamon to the browned butter, mixing until the sugar dissolves.
  7. Preheat the oven to 450℉. Use wet fingertips to press dimples all over the dough and drizzle cinnamon-butter evenly over the surface.
  8. Bake for 20-25 minutes until golden brown. Let cool for 10 minutes in the pan before transferring to a cooling rack.
  9. Combine powdered sugar, milk, and vanilla extract until smooth. Drizzle the icing over warm focaccia, slice into squares, and enjoy!

Notes

Make sure the water is warm but not hot when activating the yeast. Don’t skip the first rise in the refrigerator for flavor development. Adjust icing milk for preferred consistency.
