Description

An indulgent banana bread that combines rich chocolate and espresso for a delightful treat.


Ingredients

  • 1 cup all-purpose flour
  • ¼ cup cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • ½ teaspoon espresso powder
  • ½ cup olive oil
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs (room temperature)
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • 1 cup ripe bananas (mashed)
  • ½ cup dark chocolate chips + a few extra for the top
  • ½ cup semi-sweet chocolate chips + a few extra for the top
  • 1 tablespoon all-purpose flour (for dusting chocolate chips)
  • ¼ banana (for garnish)
  • 1 teaspoon granulated sugar

Instructions

  1. In a bowl, whisk together the flour, cocoa powder, baking soda, salt, and espresso powder.
  2. In another bowl, combine the olive oil, brown sugar, granulated sugar, eggs, vanilla extract, sour cream, and mashed bananas. Mix thoroughly until well blended.
  3. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Be careful not to over-mix.
  4. In a small bowl, dust the dark and semi-sweet chocolate chips with the tablespoon of flour to prevent them from sinking, and fold them into the batter.
  5. Pour the batter into a greased loaf pan. Top with extra chocolate chips and garnish with thin slices of banana sprinkled with granulated sugar.
  6. Place in a preheated oven at 350°F (175°C) and bake for about 60-70 minutes, or until a toothpick comes out clean.

Notes

Serve warm with whipped cream or vanilla ice cream, and pair with a strong cup of coffee.
