- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir the melted butter into the mashed bananas until well combined.
- Mix in the baking soda and salt, combining thoroughly.
- Add the sugar, beaten egg, and vanilla extract, mixing until the batter is homogenous.
- Stir in the flour until just incorporated—be careful not to overmix!
- Fold in the chocolate chips gently.
- Pour the batter into the greased loaf pan.
- Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for a few minutes, then turn it out onto a wire rack to cool completely.
Notes
For best results, use very ripe bananas and avoid overmixing the batter.
