Description

A comforting and easy chicken soup recipe loaded with tender chicken, hearty vegetables, and ditalini pasta – perfect for chilly days or a cozy family meal.


Ingredients

  • 2 cups shredded chicken
  • 1 cup ditalini pasta
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 2 cups water
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat a splash of oil in a large pot over medium heat. Add the chopped onion, diced carrots, and celery, sautéing until softened.
  2. Toss in the minced garlic and sauté for an additional minute.
  3. Pour in the chicken broth and water, bringing the mixture to a boil.
  4. Add the ditalini pasta and cook according to the package instructions until al dente.
  5. Stir in the shredded chicken and let it warm through.
  6. Taste and season with salt and pepper as desired.
  7. Serve warm, garnished with fresh parsley.

Notes

For extra flavor, simmer the vegetables longer before adding broth. Feel free to use rotisserie chicken for convenience.
