Description

A quick and satisfying Chicken Lo Mein recipe that brings the vibrant flavors of Chinese takeout into your kitchen.


Ingredients

  • 34 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 carrots, thinly sliced
  • 2 green onions, chopped
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic

Instructions

  1. Gather all ingredients and chop the vegetables into bite-sized pieces.
  2. Cook the Lo Mein noodles according to package instructions until al dente, drain, and set aside.
  3. Heat a large skillet or a wok over medium-high heat. Add sesame oil.
  4. Sauté the chicken pieces until golden brown and fully cooked, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  5. In the same skillet, toss in the bell peppers, carrots, and green onions. Stir-fry for about 3-4 minutes until tender yet crisp.
  6. Return the cooked chicken to the skillet. Add the cooked Lo Mein noodles, soy sauce, sesame oil, minced garlic, and any additional spices you like.
  7. Toss everything together until it’s well mixed and heated through.
  8. Serve hot with extra soy sauce if desired.

Notes

Feel free to swap chicken for shrimp or tofu. Customize vegetables based on what’s available.
