- 1 lb ground beef
- 4 cups diced potatoes
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups shredded cheddar cheese
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Brown the ground beef in a large pot over medium heat and drain excess fat.
- Add chopped onion and minced garlic. Sauté until the onion is translucent.
- Add diced potatoes and beef broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Stir in heavy cream and cheddar cheese until melted and smooth.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley and additional cheese if desired.
Notes
For variations, you can add jalapeños for heat, vegetables like carrots or peas, or use different cheeses for flavor.
