- 1.5 pounds lean ground beef
- 1 red bell pepper, seeded and chopped
- 1 yellow onion, chopped
- 1 ounce taco seasoning mix
- 2 ½ cups biscuit mix (like Bisquick)
- 1 cup water
- Cooking spray (like Pam)
- ½ cup sour cream
- ½ cup mayonnaise
- 4 ounces diced green chiles, drained
- 1 ½ cups shredded cheddar cheese (Fiesta blend)
- 1 teaspoon garlic powder
- ½ cup mild salsa
Instructions
- Preheat the oven to 350°F.
- Cook the ground beef: In a large skillet over medium-high heat, add the ground beef. Break it apart with a spoon, cooking until no longer pink. Drain any excess fat.
- Prepare the biscuit dough: In one mixing bowl, combine the biscuit mix and water. Mix well, preferably with your hands for a thorough blend. Spray the 9 x 13” casserole dish with cooking spray. Press the dough evenly into the dish, spreading it all the way to the edges. Bake for 5-8 minutes or until set and lightly golden.
- Add the chopped onions and red bell pepper to the ground beef in the skillet. Stir and cook for about 4 minutes. Mix in the taco seasoning and remove from heat.
- Spread the cooked beef mixture evenly over the biscuit layer in your casserole dish.
- In a second bowl, mix sour cream, mayonnaise, drained chiles, ¾ cup of shredded cheese, and garlic powder until smooth. Carefully spread this mixture over the ground beef layer.
- Top this layer with small spoonfuls of salsa. Finish by sprinkling the remaining shredded cheese evenly on top.
- Bake uncovered for 30 minutes or until the dish is hot and bubbly.
Notes
Allow the casserole to rest for a few minutes after baking before cutting into it. It helps to set properly.
