Description

A comforting Cajun Potato Soup packed with rich flavors from andouille sausage and a creamy texture, perfect for cozy gatherings or weeknight dinners.


Ingredients

  • 1 lb andouille sausage, sliced
  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 1 bell pepper, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large pot over medium heat and add sliced andouille sausage. Cook until browned and set aside.
  2. Add chopped onion, celery, and bell pepper to the pot. Sauté until softened, about 5 minutes.
  3. Stir in minced garlic and cook for 1 minute.
  4. Add diced potatoes, chicken broth, Cajun seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 to 20 minutes.
  5. Stir in heavy cream and return cooked sausage to the pot, mixing well.
  6. Lower the heat and add shredded cheddar cheese until melted and creamy.
  7. Serve hot and enjoy!

Notes

For a lighter version, replace heavy cream with half-and-half or a plant-based alternative. Great for meal prep and leftovers can be frozen for up to 3 months.
