- 1 lb andouille sausage, sliced
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 celery stalks, chopped
- 1 bell pepper, chopped
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 2 tsp Cajun seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a large pot over medium heat and add sliced andouille sausage. Cook until browned and set aside.
- Add chopped onion, celery, and bell pepper to the pot. Sauté until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute.
- Add diced potatoes, chicken broth, Cajun seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 to 20 minutes.
- Stir in heavy cream and return cooked sausage to the pot, mixing well.
- Lower the heat and add shredded cheddar cheese until melted and creamy.
- Serve hot and enjoy!
Notes
For a lighter version, replace heavy cream with half-and-half or a plant-based alternative. Great for meal prep and leftovers can be frozen for up to 3 months.
