- 1 lb andouille sausage
- 4 medium potatoes, diced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 stalks celery, chopped
- 1 tablespoon Cajun spices
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup cheddar cheese, shredded
- Salt and pepper to taste
Instructions
- In a large pot, cook sliced andouille sausage over medium heat until browned.
- Add chopped onions, bell peppers, and celery and sauté until soft.
- Stir in diced potatoes, Cajun spices, and broth.
- Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Stir in heavy cream and cheddar cheese, and cook until cheese is melted.
- Season with salt and pepper to taste. Serve hot.
