Description

A hearty and flavorful soup combining andouille sausage, creamy cheese, and Cajun spices, perfect for chilly evenings.


Ingredients

  • 1 lb andouille sausage
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 stalks celery, chopped
  • 1 tablespoon Cajun spices
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook sliced andouille sausage over medium heat until browned.
  2. Add chopped onions, bell peppers, and celery and sauté until soft.
  3. Stir in diced potatoes, Cajun spices, and broth.
  4. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  5. Stir in heavy cream and cheddar cheese, and cook until cheese is melted.
  6. Season with salt and pepper to taste. Serve hot.

Notes

Garnish with fresh parsley or green onions. Pair with crusty bread or cornbread. For a spicier kick, serve with hot sauce.
