- 2 boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 8 oz pasta (fettuccine or penne)
- 1 tablespoon olive oil
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup bell peppers (sliced)
- 1/2 cup onions (sliced)
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Prepare the pasta according to package instructions. Drain and set aside.
- Coat chicken breasts evenly with Cajun seasoning.
- In a large skillet, heat olive oil over medium heat, add seasoned chicken, and sauté for 6-7 minutes on each side until cooked through. Remove chicken and let it rest.
- In the same skillet, add sliced bell peppers and onions, sauté until softened.
- Pour in chicken broth and bring to a simmer, then stir in heavy cream until well blended.
- Return sliced chicken to skillet, add cooked pasta, and toss gently. Season with salt and pepper to taste.
- Serve hot, topped with Parmesan cheese.
Notes
For a lighter option, substitute heavy cream with half-and-half or use cashew cream for a dairy-free version.
