Description

A delightful blend of creamy goodness and a spicy kick, perfect for weeknight dinners or entertaining.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 8 oz pasta (fettuccine or penne)
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup bell peppers (sliced)
  • 1/2 cup onions (sliced)
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Prepare the pasta according to package instructions. Drain and set aside.
  2. Coat chicken breasts evenly with Cajun seasoning.
  3. In a large skillet, heat olive oil over medium heat, add seasoned chicken, and sauté for 6-7 minutes on each side until cooked through. Remove chicken and let it rest.
  4. In the same skillet, add sliced bell peppers and onions, sauté until softened.
  5. Pour in chicken broth and bring to a simmer, then stir in heavy cream until well blended.
  6. Return sliced chicken to skillet, add cooked pasta, and toss gently. Season with salt and pepper to taste.
  7. Serve hot, topped with Parmesan cheese.

Notes

For a lighter option, substitute heavy cream with half-and-half or use cashew cream for a dairy-free version.
