Ingredients

  • 2 tablespoons Cajun Seasoning
  • 8 ounces Linguine Pasta, cooked al dente
  • 1 cup Heavy Cream
  • ¾ cup Parmesan Cheese, grated
  • 3 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • 2 cups Fresh Spinach
  • Salt and Black Pepper, to taste
  • Fresh Parsley, for garnish

Instructions

  1. Season the chicken breasts with Cajun seasoning, salt, and black pepper, and let sit for 10 minutes.
  2. Cook the linguine in salted boiling water according to package instructions; reserve ½ cup of pasta water before draining.
  3. Heat olive oil in a skillet over medium-high heat, add chicken, and sear for 4-5 minutes on each side until cooked through. Remove from pan to rest.
  4. In the same skillet, sauté minced garlic for about a minute, then add heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and creamy.
  5. Slice the chicken and add back to the skillet with the pasta; toss to combine. Fold in spinach until slightly wilted.
  6. Plate and garnish with fresh parsley before serving.

Notes

For added flavor, consider marinating the chicken in Cajun seasoning ahead of time. Reserve pasta water is crucial for sauce consistency.
