- 2 large Chicken Breasts, boneless and skinless
- 2 tablespoons Cajun Seasoning
- 8 ounces Linguine Pasta, cooked al dente
- 1 cup Heavy Cream
- ¾ cup Parmesan Cheese, grated
- 3 cloves Garlic, minced
- 2 tablespoons Olive Oil
- 2 cups Fresh Spinach
- Salt and Black Pepper, to taste
- Fresh Parsley, for garnish
Instructions
- Season the chicken breasts with Cajun seasoning, salt, and black pepper, and let sit for 10 minutes.
- Cook the linguine in salted boiling water according to package instructions; reserve ½ cup of pasta water before draining.
- Heat olive oil in a skillet over medium-high heat, add chicken, and sear for 4-5 minutes on each side until cooked through. Remove from pan to rest.
- In the same skillet, sauté minced garlic for about a minute, then add heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and creamy.
- Slice the chicken and add back to the skillet with the pasta; toss to combine. Fold in spinach until slightly wilted.
- Plate and garnish with fresh parsley before serving.
Notes
For added flavor, consider marinating the chicken in Cajun seasoning ahead of time. Reserve pasta water is crucial for sauce consistency.
