Description

A quick and comforting skillet meal featuring juicy chicken in a creamy sauce, ready in just 30 minutes.


Ingredients

  • 4 pieces boneless skinless chicken breasts or thighs
  • 4 tablespoons butter (or olive oil)
  • 4 cloves garlic, minced
  • 1 cup chicken broth (low-sodium recommended)
  • 2 tablespoons honey
  • 1 teaspoon paprika
  • Salt to taste
  • Cracked black pepper to taste
  • 1 cup caramelized onions
  • 1 cup shredded cheddar or Monterey Jack cheese (optional)
  • 2 tablespoons dried parsley (for garnish)
  • 1 teaspoon cayenne pepper or hot sauce
  • 1/2 cup heavy cream
  • 1 cup cherry tomatoes and kalamata olives

Instructions

  1. Heat the butter (or olive oil) in a large skillet over medium-high heat.
  2. Add the chicken pieces, season with salt, pepper, and paprika, and sauté until golden brown, about 6-7 minutes per side.
  3. Remove the chicken from the skillet and set aside.
  4. Add the minced garlic to the skillet and cook for about 30 seconds until fragrant.
  5. Pour in the chicken broth, honey, and heavy cream, stirring to combine.
  6. Add the caramelized onions, cherry tomatoes, olives, and cayenne pepper, stirring well.
  7. Return the chicken to the skillet, cover, and simmer for about 5-7 minutes to meld the flavors.
  8. If desired, sprinkle with shredded cheese and let it melt before serving.
  9. Garnish with dried parsley and enjoy!

Notes

For a lighter option, replace butter with olive oil. Store leftovers in the fridge for 3-4 days and freeze for longer storage.
