- 4 pieces boneless skinless chicken breasts or thighs
- 4 tablespoons butter (or olive oil)
- 4 cloves garlic, minced
- 1 cup chicken broth (low-sodium recommended)
- 2 tablespoons honey
- 1 teaspoon paprika
- Salt to taste
- Cracked black pepper to taste
- 1 cup caramelized onions
- 1 cup shredded cheddar or Monterey Jack cheese (optional)
- 2 tablespoons dried parsley (for garnish)
- 1 teaspoon cayenne pepper or hot sauce
- 1/2 cup heavy cream
- 1 cup cherry tomatoes and kalamata olives
Instructions
- Heat the butter (or olive oil) in a large skillet over medium-high heat.
- Add the chicken pieces, season with salt, pepper, and paprika, and sauté until golden brown, about 6-7 minutes per side.
- Remove the chicken from the skillet and set aside.
- Add the minced garlic to the skillet and cook for about 30 seconds until fragrant.
- Pour in the chicken broth, honey, and heavy cream, stirring to combine.
- Add the caramelized onions, cherry tomatoes, olives, and cayenne pepper, stirring well.
- Return the chicken to the skillet, cover, and simmer for about 5-7 minutes to meld the flavors.
- If desired, sprinkle with shredded cheese and let it melt before serving.
- Garnish with dried parsley and enjoy!
Notes
For a lighter option, replace butter with olive oil. Store leftovers in the fridge for 3-4 days and freeze for longer storage.
