Description

A delightful one-pan meal featuring tender chicken, creamy sauce, and hearty pasta, perfect for impressing someone special or for a comforting weeknight dinner.


Ingredients

  • 1 lb (450 g) boneless skinless chicken breasts, sliced into thin cutlets
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 8 oz (225 g) pasta (penne or rigatoni)
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Season the chicken cutlets generously with salt and pepper on both sides.
  2. In a large skillet over medium-high heat, warm 1 tablespoon of olive oil. Sear the chicken for about 3-4 minutes on each side, until golden brown and cooked through. Remove the chicken and keep it warm on a plate.
  3. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Be sure to reserve ½ cup of the pasta cooking water before draining.
  4. In the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic for about 30 seconds until fragrant, then add the chopped sun-dried tomatoes and cook for an additional 1-2 minutes.
  5. Pour in the heavy cream, bringing the mixture to a gentle simmer. Stir in the grated Parmesan cheese until melted and smooth. If the sauce becomes too thick, loosen it with a few tablespoons of reserved pasta water.
  6. Slice the cooked chicken and return it to the skillet. Add the drained pasta and toss everything together until well-coated in the creamy sauce.
  7. Serve immediately, garnished with extra Parmesan or fresh basil if desired.

Notes

Feel free to customize with whole wheat pasta or additional vegetables. For a lighter version, consider using half-and-half instead of heavy cream.
