- 1 lb (450 g) boneless skinless chicken breasts, sliced into thin cutlets
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
- 8 oz (225 g) pasta (penne or rigatoni)
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
Instructions
- Season the chicken cutlets generously with salt and pepper on both sides.
- In a large skillet over medium-high heat, warm 1 tablespoon of olive oil. Sear the chicken for about 3-4 minutes on each side, until golden brown and cooked through. Remove the chicken and keep it warm on a plate.
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Be sure to reserve ½ cup of the pasta cooking water before draining.
- In the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic for about 30 seconds until fragrant, then add the chopped sun-dried tomatoes and cook for an additional 1-2 minutes.
- Pour in the heavy cream, bringing the mixture to a gentle simmer. Stir in the grated Parmesan cheese until melted and smooth. If the sauce becomes too thick, loosen it with a few tablespoons of reserved pasta water.
- Slice the cooked chicken and return it to the skillet. Add the drained pasta and toss everything together until well-coated in the creamy sauce.
- Serve immediately, garnished with extra Parmesan or fresh basil if desired.
Notes
Feel free to customize with whole wheat pasta or additional vegetables. For a lighter version, consider using half-and-half instead of heavy cream.
