Description

This one-pot lasagna soup brings all the hearty, comforting flavors of traditional lasagna, but in a cozy, warming soup form, perfect for chilly evenings or busy weeknights.


Ingredients

  • 1 lb ground beef or sausage
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 can (28 oz) crushed tomatoes
  • 8 oz lasagna noodles, broken into pieces
  • 1 teaspoon Italian seasoning
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot or Dutch oven, cook the ground beef or sausage over medium heat until browned. Drain excess fat.
  2. Add diced onion and minced garlic, sautéing until soft and fragrant.
  3. Pour in the broth and crushed tomatoes, stirring to combine.
  4. Bring the mixture to a gentle boil, then add the broken lasagna noodles and Italian seasoning.
  5. Cook for about 10-12 minutes, or until the pasta is tender, stirring occasionally.
  6. Season with salt and pepper to taste.
