Description

A hearty, comforting dish that combines tender beef and wholesome barley in a flavorful broth, perfect for cozy dinners and gatherings.


Ingredients

  • 1 pound beef stew meat
  • 1 cup barley (pearl barley recommended)
  • 4 cups beef broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat a splash of oil over medium heat. Sauté the chopped onion, diced carrots, and celery until softened, around 5-7 minutes.
  2. Add the minced garlic and the beef stew meat; brown the meat on all sides to seal in flavor.
  3. Stir in the barley, beef broth, thyme, bay leaf, and a sprinkle of salt and pepper.
  4. Bring everything to a boil, then reduce heat and let it simmer for about 1.5 hours until the beef is tender and the barley soaks in all the flavors.
  5. Remove the bay leaf before serving and enjoy!

Notes

For a richer flavor, use a combination of beef broth and a splash of red wine. Feel free to customize ingredients based on what’s in your pantry.
