- 1 pound beef stew meat
- 1 cup barley (pearl barley recommended)
- 4 cups beef broth
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, heat a splash of oil over medium heat. Sauté the chopped onion, diced carrots, and celery until softened, around 5-7 minutes.
- Add the minced garlic and the beef stew meat; brown the meat on all sides to seal in flavor.
- Stir in the barley, beef broth, thyme, bay leaf, and a sprinkle of salt and pepper.
- Bring everything to a boil, then reduce heat and let it simmer for about 1.5 hours until the beef is tender and the barley soaks in all the flavors.
- Remove the bay leaf before serving and enjoy!
Notes
For a richer flavor, use a combination of beef broth and a splash of red wine. Feel free to customize ingredients based on what’s in your pantry.
