- 2 tbsp unsalted butter, melted
- 2 tbsp extra-virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- 1 tsp freshly minced garlic
- 1 tsp honey
- 1 tsp sweet paprika
- 1 tsp dried oregano
- 1 tsp sea salt flakes
- ½ tsp cracked black pepper (plus extra to serve)
- ½ tsp chilli (red pepper) flakes (optional)
- 4 skin-on salmon fillets
Instructions
- Preheat your oven to 220°C (425°F) or 200°C (400°F fan-forced) for at least 20 minutes.
- In a mixing bowl, combine the melted butter, olive oil, lemon juice, minced garlic, honey, sweet paprika, dried oregano, sea salt, cracked black pepper, and chilli flakes if using. Stir well to create the marinade.
- Place the salmon fillets skin-side down in a roasting tin and evenly spoon the marinade over the salmon.
- Bake the salmon for about 12 minutes, then switch the oven grill to high and cook for an additional 3 minutes until caramelized and cooked to your desired doneness.
- Serve the salmon hot with your choice of sides and garnish with fresh lemon slices and parsley.

Store leftovers in an airtight container in the refrigerator for up to two days, or freeze for up to three months.
