- 8 skin-on chicken drumsticks (approx. 2 pounds total weight)
- 3 tbsp olive oil
- 1 tbsp sea salt
- ½ tsp black pepper
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp smoked or sweet paprika
- 1 tbsp dry mustard (optional)
Instructions
- Preheat your oven to 400°F and line a baking sheet with aluminum foil or parchment paper.
- In a small mixing bowl, combine garlic powder, onion powder, paprika, sea salt, and black pepper.
- Using a fork, blend the spices until evenly mixed.
- Pour the olive oil into the spice mix and stir well to create a seasoning oil.
- Allow the chicken legs to come to room temperature for better cooking.
- Coat each chicken drumstick with the seasoning oil mixture, ensuring every inch is covered.
- Place the seasoned chicken legs in a single layer on the prepared baking sheet, making sure there’s space between them for even cooking.
- Bake for 30 minutes on the middle rack of your oven.
- After 30 minutes, brush the chicken legs with any oil on the tray and bake for an additional 5-10 minutes or until the chicken is crispy.
Notes
For extra crunch, broil the chicken legs for the last couple of minutes. Feel free to tweak the spice quantities according to your taste.
